Almond Joy Cookies

Ingredients
- 2 cups unsweetened coconut flakes
- 1 1/2 cups almond flour
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup coconut oil
- 2 tsp. almond extract
- 1/2 cup dark chocolate cocoa chips
Directions
In a large bowl, combine all of the ingredients together stirring well. Line baking stone cookie sheets with parchment paper. Using a melon ball scoop the dough onto the baking sheet. Gently press the dough with wet fingers to flatten slightly. Bake at 350 degrees for 10-12 minutes just until golden brown on the edges. Cool for 10 minutes on pan and then transfer to a cooling rack. Store in an air tight container in the refrigerator.
