Amaretto Chocolate Cake

  • Cake:
  • 3 squares baking chocolate
  • 1/2 cup hot water
  • 8 oz sweet whipped butter at room temperature
  • 2 cups sugar
  • 1/2 cup amaretto
  • 2 1/4 cups all-purpose flour
  • 4 eggs at room temperature
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 8 ounces sour cream
  • Frosting:
  • 12 oz semisweet chocolate chips
  • 1/2 cup sweet whipped butter
  • 1 1/2 cups 4X powdered sugar
  • 2 eggs
  • 1/4 cup amaretto



Melt chocolate in hot water and let cool slightly. Beat the butter, sugar, and 1/2 cup amaretto together. Slowly add the chocolate. Add eggs one at a time, beating well after each egg. Mix the flour, soda, salt, and sour cream. Bake mixture in three greased round cake pans at 350 degrees for 20 to 25 minutes. Cool completely.


Melt chocolate in a double boiler, then allow it to cool. Beat in butter, sugar, and 1/4 cup amaretto. Add chocolate and beat until smooth. Spread on layers and sides.

This is more flavorful when made a couple of days ahead of time, allowing the flavors to develop. The cake also freezes beautifully.
