Cashew Butter Cookies

  • 2 eggs
  • 2/3 cups almond flour
  • 1/2 tsp. baking soda
  • 1 tsp. pure vanilla
  • 1 cup cashew butter
  • 1/2 cup coconut sugar plus 2 tbsp. coconut sugar reserved



Mix all ingredients except the 2 tbsp. of reserved coconut sugar. Using a melon ball scoop, scoop the dough onto a stone baking sheet lined with parchment paper. Use a fork dipped in warm water to press the cookies slightly flat like you see on peanut butter cookies. Sprinkle the reserved coconut sugar on top of the cookies. Bake at 350 degrees for 12 minutes.
