Creamy Chicken and Zucchini Noodles

  • 1 1/2 lbs. boneless skinless chicken breasts cut into small cubes
  • 4 cups of zucchini noodles (about 2 large zucchini)
  • 2 tbsp. olive oil
  • 2 tbsp. water
  • 8 oz. plant based cream cheese with chives
  • 1/4 cup sundried tomatoes in oil drained and chopped




Cook the chicken in 1 tbsp. of the olive oil over medium heat. Remove the chicken from the skillet and set aside. Cook the zucchini in the remaining olive oil and water for 5-6 minutes until tender. Stir the cream cheese and sundried tomatoes into the zucchini. Add the chicken back to the zucchini and stir well.
