Crockpot Chipotle Lime Chicken

  • 4 6oz. boneless skinless chicken breast
  • 1/4 cup avocado oil
  • 1 tbsp. minced garlic
  • 1 tbsp. lime zest
  • 2 tbsp. orange juice
  • 2 tbsp. coconut sugar
  • 1/4 tsp. chilpotle powder
  • 1 tsp. cumin
  • 1 cup sweet onion sliced
  • 1 1/2 cup sliced bell pepper (I use 1/2 cup each of green, red, and yellow)
  • fresh cilantro (optional)
  • sliced avocado (optional)


Spray a crockpot with non stick spray and lay the chicken breasts on the bottom. Whisk the olive oil, garlic, lime zest, lime juice, coconut sugar, chile powder and cumin together and pour it over the chicken. Sprinkle the onion and peppers over the top and cook on high for 6 hours. Use tongs or forks to shred the chicken and vegetables together. Place the mixture on top of fresh salad greens or my Vidalia Onion Slaw and sprinkle with fresh cilantro. You can also add sliced avocado and a squeeze of lime.
