Crockpot Fajita Lime Chicken

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1 tbsp. minced garlic
  • zest and juice of one lime
  • 2 tbsp. orange juice
  • 2 tbsp. coconut sugar
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1 cup sweet onion sliced Vidalia if in season
  • 1 1/2 cups sliced bell pepper



Spray a crockpot with non stick spray and lay the chicken breasts on the bottom. Whisk the olive oil, garlic, lime zest, lime juice, coconut sugar, chile powder and cumin together and pour it over the chicken. Sprinkle the onion and peppers over the top and cook on high for 6 hours. Use tongs or forks to shred the chicken and vegetables together. Place the mixture on top of fresh salad greens or in gluten free tortillas and sprinkle with fresh cilantro. You can also add sliced avocado and a squeeze of lime.
