Crockpot Jerk Chicken

Ingredients

  • 8 boneless skinless chicken thighs
  • 1/2 cup jerk seasoning (recipe on site)
  • 1/2 cup olive oil with 2 tbsp. divided out to sear the chicken
  • 1/2 cup white vinegar
  • 2 sweet onions quartered

Directions

 

Season the chicken with the jerk seasoning. Heat the 2 tbsp. oil in a skillet over medium/high heat. Sear the chicken for 2-3 minutes on each side. Arrange all of the chicken and onion in the crockpot. Stir the oil and vinegar together and pour over the chicken and onions. Cook on high for 6 hours.
