Deconstructed Stuffed Bell Pepper Soup

Ingredients

  • 1 lb. Lean ground beef or turkey
  • 1 tbsp. olive oil
  • 1 28 oz. can of Muir Glen Fire Roasted Crushed Tomatoes
  • 1 14.5 oz. can of Muir Glen Fire Roasted Diced Tomatoes
  • 1 tbsp. minced garlic
  • 1 cup diced sweet onion
  • 1 1/2 cups diced bell pepper
  • 1 cup water
  • 1 1/2 tsp each of dried oregano, parsley and basil
  • 1 1/2 cups riced cauliflower

Directions

Brown the beef onions and peppers together in the olive oil. Drain any excess grease from the beef. Add the remaining ingredients and stir well. Simmer for 30 minutes and then serve.
