Fajita Chicken Salad

From the Kitchen of Lara Lyn Carter


  • 4 cups cooked chicken shredded
  • 1 tbsp lime juice
  • 1 cup diced bell pepper
  • 1/2 diced onion
  • 1/2 to 3/4 cups cup vegan mayonnaise adjust according to taste
  • 2 tbsp. fajita seasoning (Recipe on site under seasoning category)
  • 1 cup shredded plant based cheese
  • cilantro or avocado for topping optional


Shred cooked chicken into a large bowl. Add all of the remaining ingredients and stir well. Top with cilantro or avocado if desired.
