Herbed Pork Loin

  • 3-lb. pork tenderloin
  • 1/4 cup olive oil, divided
  • 1/4 cup plain bread crumbs
  • 1 clove garlic, minced
  • 2 tsp. chopped fresh thyme
  • 2 tsp. chopped fresh rosemary
  • 1 tsp. lemon zest


Place pork on lined baking sheet. Drizzle 1 tbsp. of the olive oil on pork and rub over meat. Combine the remaining ingredients and rub onto meat. Roast pork at 375 degrees for 50-60 minutes or until internal temperature reaches 160 degrees. Cool for 10 minutes before slicing.
