Jumbo Banana Chocolate Chip Muffins

  • 3 ripe bananas
  • 3 eggs
  • 1/2 cup coconut sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. fine sea salt
  • 1 tsp. vanilla
  • 3 cups almond flour
  • 1 cup dark chocolate cocoa chips


Preheat oven to 325 degrees. In a mixer combine the bananas, eggs, coconut sugar, and vanilla together. Combine the dry ingredients except for the chocolate chips in a bowl and then add them slowly to the wet ingredients. Stir in the chocolate chips. Pour the mixture into jumbo paper muffin cups and bake for 35 minutes.
