Lemon Blueberry Muffins

Ingredients

  • 2 cups almond flour (I use Bob's Red Mill)
  • 1/2 tsp. baking soda
  • 1 tsp. fine sea salt
  • zest of 2 lemons
  • 3 eggs
  • 1/2 cup honey
  • 2 tbsp. lemon juice
  • 2 tbsp. coconut sugar
  • 1 tsp. vanilla
  • 1 cup fresh blueberries

Directions

In a large bowl, mix dry ingredients together except for the coconut sugar. Add the wet ingredients to the dry and mix well. Pour into lined muffin tins and bake at 350 degrees for about 20 minutes.
