Merlot Meatloaf

  • 1 tbsp. olive oil
  • 1 1/2 cups sweet onion, diced
  • 3 tbsp. Merlot Steak Sauce
  • 1/3 cup water
  • 1 tbsp. tomato paste
  • 2 1/2 lbs. ground chuck
  • 1/2 bread crumbs
  • 2 eggs
  • 1/2 cup Merlot Steak Sauce for the top


Sauté the onions in olive oil over medium heat until translucent. Add the Merlot Steak Sauce, water, and tomato paste to the onions and mix well.  Allow this mixture to cool for 10-15 minutes before the next step. In a large bowl, gently blend the onion mixture, ground chuck, bread crumbs and eggs. Do not overwork the mixture. Shape mixture into a loaf and place on a sheet pan lined with parchment. Top with remaining Merlot Steak Sauce and bake at 325 degrees for 1 hour 15 minutes.
