Oatmeal Raisin Walnut Cookies

- 1/3 cup coconut oil
- 2 eggs beaten
- 1 cup Bob’s Red Mill Coconut Sugar
- 1tsp. Pure vanilla
- 1/2 tsp. Baking soda
- 1/2 tsp. Fine sea salt
- 2 cups Bob’s Red Mill Almond Flour
- 1 cup Bob’s Red Mill GF Organic Rolled Oats
- 1/2 cup golden raisins
- 1/2 cup chopped walnuts
Combine the oil, eggs, coconut sugar and vanilla in a large bowl. Stir in the flour, soda and salt. Stir very well. Last, stir in the oats, raisins and walnuts.
Use a melon ball scoop to the dough onto parchment lined baking sheet. Bake at 350 degrees for 12-14 minutes.
