Oatmeal Raisin Walnut Cookies

  • 1/3 cup coconut oil
  • 2 eggs beaten
  • 1 cup Bob’s Red Mill Coconut Sugar
  • 1tsp. Pure vanilla
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Fine sea salt
  • 2 cups Bob’s Red Mill Almond Flour
  • 1 cup Bob’s Red Mill GF Organic Rolled Oats
  • 1/2 cup golden raisins
  • 1/2 cup chopped walnuts


Combine the oil, eggs, coconut sugar and vanilla in a large bowl. Stir in the flour, soda and salt. Stir very well. Last, stir in the oats, raisins and walnuts.

Use a melon ball scoop to the dough onto parchment lined baking sheet. Bake at 350 degrees for 12-14 minutes.
