- 2 cups cooked salmon, flaked
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 2/3 cup cucumber, peeled, seeded, and diced
- 1/2 cup sweet onion (Vidalia if available), diced
- Juice of 1 lemon
- 1/2 cup Homegrown Herb Dressing
In a large bowl, gently toss all ingredients together. Serve in lettuce cups or on a sandwich.
