Salmon Salad

From the Kitchen of Lara Lyn Carter


  • 2 cups cooked salmon, flaked
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 2/3 cup cucumber, peeled, seeded, and diced
  • 1/2 cup sweet onion (Vidalia if available), diced
  • Juice of 1 lemon
  • 1/2 cup Homegrown Herb Dressing


In a large bowl, gently toss all ingredients together. Serve in lettuce cups or on a sandwich.
