Seafood Omelet

  • 2 tbsp. butter
  • 4 eggs
  • 2 tbsp. milk
  • 1/4 lb. shrimp
  • 2 onces crab
  • 2 oz. cream cheese
  • 2 tbsp. sour cream
  • 1/4 cup chopped scallions
  • 4 tbsp. parmesan cheese


Melt butter in a skillet or omelet pan. Whisk the eggs and milk together and pour into pan. Mix the cream cheese and sour cream together and set aside. Cook the omelet until just set. Add the cream cheese and sour cream, scallions and shrimp and crab to the omelet. Fold the omelet over and remove from the pan and place on a baking dish.Top the omelet with the cheeses and place the omelet under the broiler for a few seconds to melt the cheese!
