Shrimp Taco in Lettuce cups with Spicy Slaw

  • 6 lbs.
  • 2 tbsp. olive oil
  • 1/2 tsp. coarse salt
  • 1 tbsp. garlic
  • 3/4 cup olive oil mayonnaise
  • 1/2 cup chopped scallions (green parts only)
  • 2 tbsp. creole mustard
  • 1 tbsp. lime zest
  • 1 tbsp. lime juice
  • 16 oz. slaw
  • butter lettuce cups


Toss the shrimp with the olive oil and salt. Roast the shrimp on a backing sheet at 400 degrees for 8-10 minutes. Combine the remaining ingredients, except for the lettuce cups, in a large bowl to make the slaw. Arrange the lettuce cups on a large platter and divide the slaw and shrimp evenly among the lettuce cups.
