Sweet and Sour Chicken

  • 3 boneless skinless chicken breasts diced
  • 1 tbsp. olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium sweet onion diced Vidalia if in season
  • 1 15 oz. can of pineapple chunks in juice drained
  • 1/2 cup chopped scallions
  • 1 recipe of my sweet and sour sauce on separate recipe


Cook the chicken with the vegetables in the oil over medium heat until the chicken is done all of the way through and the vegetables are soft. Pour the pineapple and sweet and sour sauce over the chicken and vegetables. Cover the skillet and cut off the heat. Allow the mixture to sit for 3 minutes. Serve over riced cauliflower and top with scallions.
