Upside Down Fig Cake

  • 20 figs cut in half
  • 4 tbsp. organic butter
  • 1 and 1/2 cup coconut sugar divided
  • 2 tbsp. maple syrup
  • 1 1/2 cups almond flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 cup milk



Combine the butter, 1/2 cup of coconut sugar, and maple syrup together in a saucepan over medium heat to dissolve the sugar. Arrange the cut figs in the bottom of a cast iron skillet that has been sprayed with non stick spray. Pour the mixture over the figs.

Combine the flour, baking powder, salt, 1 cup coconut sugar, vanilla, eggs and milk together and pour over the figs and syrup mixture. Bake at 350 degrees for 35-40 minutes. Cool for 10 minutes and then turn the cake out onto a platter.
